This one is a natural anaerobic process. The coffee was fermented for an extra 48 hours in a static bed. After fermentation the coffee was spread out on the patio to sundry. We also have a similar Brazil Hugo Brito that is very similar, same 48 hour anaerobic process, but the blackberry note is stronger in that one.
